Maple-Balsamic Chicken Thighs
Suggested Wine: Fulkerson Riesling
1 OSO Sweet Onion
Vegetable oil spray
6 chicken thighs
Salt and pepper
1⁄4 cup olive oil
1⁄2 cup maple syrup
3 tablespoons balsamicvinegar
3 tablespoons Italianseasoning
Remove skin from onionand cut into 6 slices. Arrangeflat in a 13 x 9-inch baking panand spray with vegetable oilspray. Place each thigh on topof an onion slice. Generouslysprinkle with salt and pepper.Mix remaining ingredientsand generously brush eachthigh/onion combo, coveringas much of the chicken andonion as possible. Roast at400° F in middle of oven for 15minutes; reduce oven temperatureto 350° F and roast 30minutes, basting with panjuices 2 or 3 times.
