Wine & Dine: Cuban Marinated Salmon

Serves 4

 

Ingredients:

Marinade

6 medium cloves garlic - peeled and crushed

3 tablespoons minced onion

1 teaspoon cumin

1 teaspoon oregano

1/2 teaspoon thyme

2 tablespoons, minced fresh cilantro

3 tablespoons minced fresh parsley

6 tablespoons lime juice

salt, pepper, to taste

2 tablespoons virgin olive oil

2 tablespoons vegetable oil

4 (6 ounce) filets of salmon

 

Instructions:

In a non reactive bowl, whisk together the garlic, onion, cumin, oregano, thyme, cilantro, parsley and lime juice. Add salt and pepper to taste about 1-2

teaspoons salt, 3/8 teaspoon pepper). Stir in olive and vegetable oils.

Place filets in a shallow dish and pour marinade on top. Marinate 2-4 hours in the fridge. Grill salmon (oven broiler or on outdoor grill), until done,

basting for the first couple of minutes with extra marinade. Serve hot, with seasoned rice, or minted new potatoes, or a green salad.

Comments:

Salmon is always a welcome main dish. This can be marinated ahead and grilled on the bbq or in an oven broiler. Do not overcook it. It is good chilled or warm.
