Suggested wine: Reibeek Cellars 2010 Chardonnay
Ingredients:
1/2 cup all-purpose flour
1/4 teaspoon Clabber Girl Baking Powder
5 eggs, well baten
4 cups unpeeled zucchini, grated
8 ounces mozzerella cheese, shredded
1/2 cup Parmesan cheese, shredded
1/2 cup cooking oil
1/2 cup onion, chopped
Instructions:
Sift together flour and Clabber Girl Baking Powder. In a separate bowl, beat eggs well. Stir in all other ingredients; place in a greased 10 inch pie pan.
Bake at 350 °F for 45 minutes or until golden brown.
Makes approximately 6 servings.
Note: If you use a 13x9 inch baking pan, bake at 350° F for 40 minutes or until golden brown.
